Sip by Sip: Understanding Sweetness in Wine

You’ve probably heard us describe wines as dry, off-dry, semi-sweet, or sweet—but what do those terms really mean?

It all starts during fermentation. As grapes ferment, natural sugars are converted into alcohol. From the very beginning, the winemaker is shaping the final profile of the wine—including how sweet (or not) it will be.

There are a couple of ways to control that sweetness:

  • Fermenting to dry: Letting all the sugar convert to alcohol, resulting in little to no sweetness.

  • Stopping fermentation early: Halting the process before all the sugar is converted, leaving behind a touch of natural sweetness—often used for off-dry or semi-dry wines.

  • Back sweetening: Adding sugar or grape concentrate after fermentation to achieve a sweeter style. This is commonly done for semi-sweet and sweet wines, often using the same grape varietal or a complementary one to enhance flavor.

At Shamrock Hills, Mike uses all of these techniques depending on the style he’s crafting. For wines with just a hint of sweetness, he may stop fermentation early. For richer, sweeter wines, he often back sweetens with a thoughtfully chosen grape concentrate.

So what does it mean when you see semi-dry or semi-sweet on a label?

Before bottling, wines are tested—typically around final filtration—to measure their residual sugar (RS), which is the amount of sugar left in the wine after fermentation. This number helps determine where the wine falls on the sweetness scale.

If you tend to reach for sweeter wines, you might be surprised how enjoyable an off-dry or semi-dry wine can be as your palate evolves.
